This easy Instant Pot Meatloaf comes together quickly with minimum cleanup and only uses 1 pound of meat.  It's perfect for smaller families!

The ingredients in this instant pot meatloaf are ground beef (I like to get mine from Butcherbox and you can get free bacon save $15 off of your first box!), grated onion, almond flour (I used my tutorial for how to make almond flour), heavy cream, egg, mustard powder, garlic powder, salt and pepper.

I hope everyone had a very Merry Christmas and didn’t eat too much? I sure know I did and now I’m looking to ease into 2019 with some easy and semi-healthy dinner choices. This Instant Pot Meatloaf would probably fall more into the category of easy for sure.

Not that it’s unhealthy but there are still some carbs creeping in when you add the mashed potatoes, and the two always have to be together in my opinion. You could swap out the potatoes for a creamy mashed cauliflower side instead and chop those carbs right out of the picture though!

Instant Pot Meatloaf

Prep Time: 5 minutes
Cook Time: 25 minutes
Natural Pressure Release: 10 minutes
Total Time: 30 minutes 
Servings: 6 
Calories: 234kcal 

Ingredients: 

  • 1/2 Onion, grated or finely minced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon mustard powder
  • 1 pound Ground Beef
  • 1/2 cup Heavy cream
  • 1 Egg
  • 1/2 cup Almond flour or breadcrumbs

For the glaze:
  • 1 Tablespoon Sugar (Swerve for Keto)
  • 1 Tablespoon Apple cider vinegar
  • 2 Tablespoons Ketchup (sugar free for keto)
  • 1 Tablespoon Soy sauce

Instructions:

  1. First, Mix all of the meatloaf ingredients in a large bowl.  Lay out a piece of foil about 18 inch x 18 inch square.  Pour the meatloaf mixture into the center of the foil and for into a loaf shape.  Crinkle the foil around the meatloaf.
  2. Second, Pour 1 cup of water into the instant pot, followed by the rack.  Put the foil wrapped meatloaf onto the rack and seal the lid.  Set the timer to cook for 25 minutes at high pressure.  Natural pressure release for 10 minutes.
  3. Next, Remove the meatloaf onto a baking sheet.  Set aside.
  4. In a small bowl, mix together all of the glaze ingredients.  Spoon half of the mixture on top of the meatloaf.
  5. Optional: Place the glazed meatloaf under the broiler for a few minutes to caramelize.
  6. Slice the meatloaf and serve with extra glaze
