I’m always on the look out for new and interesting ways to cook chicken! It’s one of the most versatile ingredients in the world, but just eating it on its own can get a little boring. This recipe for Syn Free Hasselback Chicken is exactly what you need if you want a healthy, Slimming World friendly dinner recipe that won’t break the bank and won’t take you hours to make! Just a few simple ingredients and voila, you have something delicious to serve up that everyone will appreciate and enjoy. 

Cheesy goodness of Tomato and Mozzarella Hasselback Chicken – this is one chicken dish you just have to try. 

I had some chicken breasts to use up for dinner and I wasn’t quite sure what to do with them, I must admit I prefer to use chicken thigh’s or a whole chicken, I just find they are better in dishes like casseroles, curries, or baked etc as breast meat tends to overcook very easily.

However I had no healthy extra b choice leftover and so I figured this would work really well with the chicken breast, if I sliced it just like these yummy Garlic Hasselback potatoes, and stuffed it with tomato slices and mozzarella.

Easy Peasy Syn Free Hasselback Chicken

Ingredients
  • 1/2tsp Garlic Powder
  • 1/2tsp Paprika
  • 1/2tsp Dried Mixed Herbs
  • Salt & Pepper (to taste)
  • Low Calorie Cooking Spray
  • 2x Large Chicken Breasts
  • 2x Tomatoes (sliced)
  • 60g Red Leicester Cheese (sliced into thin strips)
  • 2x Rashers Lean Bacon (fat removed, cut into strips)

Instructions:

  1. First, Slice two large chicken breasts at about 1.5cm intervals. Do not cut all the way through to the bottom, leaving about half a centimeter of chicken uncut at the base of each breast. 
  2. Second, Fill each cut with one piece of tomato, one piece of bacon and a small slice of cheese. 
  3. Next, Season with a pinch of garlic powder, salt, dried mixed herbs, paprika and black pepper to your taste. Spray with low calorie cooking spray. 
  4. Bake at 180 degrees for 25-30 minutes, or until the chicken is cooked all the way through. Serve with potatoes and salad!
